Does the Defensive Instinct shifter ability stack with the Ranger (Jungle Lord archetype) Hardened by Nature ability?

Yes and no. Untyped bonuses from the same ability score do not stack, so only get +WIS once, but the dodge bonuses will stack.

So it will be the "best" bonus to AC from wisdom (no stacking, the Ranger text is a bit better as "conscious" is not called out). Dodge bonuses (while not wearing armor, shield, & with lgt load) always stack (and the Shifter's progression is better).
