Today I just happened to stumble upon why we don't hear about PoultryFolk: Whenever they try to start a revolution to improve their lot this happens:

Spoiler:

They always chicken out.

Given the context of "Poultryfolk" I'm gonna guess 'poultry' + 'rougarou/loup garou'.

This may be a good time to bring up that chickens is the wild used to be infamously fiersome fighters to protect their young... although the idea of a 'hen-hearted' person being cowardly also has a sizeable history :3

Yeah chickens can be scary. Ever seen one nab a mouse? They are descended from T-rexes and they know it!

(Ok not directly descended from T-rexes, but close)

You got it. Although the ones in the wild aren't the ones that were planning a revolt at the link I posted above. (Although unfortunately, going by past history, this link will soon expire.)
