A thought occurred regarding the double barrel pistol and musket and I wanted to get some different opinions on it. Would there be anything wrong with letting them work with Double Shot and Hunted Shot? I know the actions specify reload 0, but functionally you can fire 2 shots in a row using 2 Strike actions, so it's still spending the same amount of actions and the gun would be empty afterwards all the same.

It is somewhat of a reasonable houserule. Though there are a couple of things to consider.
The two weapons already have the Double Barrel trait - which is intended to put mechanics to the theme of firing both barrels at once.
There is also the Repeating trait, which will usually cause the weapon to be a Reload 0 weapon that does qualify for Double Shot and Hunted Shot. You could Double Shot or even Triple Shot with a Barricade Buster until your 8 rounds of ammunition run out.
So if I were to houserule this, I would change the Double Barrel Pistol and Double Barrel Musket to have the Repeating (2 rounds) trait instead of the Double Barrel trait. Which is probably a bit of a nerf because of the reload time to reload a Repeating weapon.
