For models to be a monk, I kinda like the Khamsin Herdsman from Reaper Miniatures. It's this guy with a pole arm, mask/helmet, and some nice flowing desert clothes. Has a big scarf around his mask. I would probably paint the mask/helmet decoratively, maybe put the effort to turn the pole arm into a quarter staff.
