I did a thing. I've always liked the Deities and Demigods book from 3ed DnD and even played a deity in a campaign which was fun. I've been thinking of possibly elevating a character in my current game I'm running in my world, so I've been working on updating the deity rules for PF2. Here is what I've been working on. It is still a work in progress, but I would love any feedback. Thanks.

I have been working on a similar project that defines how a mortal can become a god like the glaistig Gendowyn and the human Kurgess did. I just posted it to the Homebrew subforum: Godhood Archetype for Characters to Earn Deity Status.
The Godhood Dedication feat gives a character access to the initial domain spells of two domains. They need to work their way up to four domains before they can take the 20th-level Full Status feat that makes them an immortal god. They can grant spells to followers by taking a Godhood feat of 12th level or higher, at which point they will have three domains.
In other words, I have been creating subdivisions of Echelon Level 0 for fledgling deities. To gain any abilities of Echelon Level 1, apetor deities, they would have to gain levels above 20th level (surely gods could manage that, right?) to take Apetor feats.
I created this archetype after a character met Gendowyn, Lady of Fangwood in the module Prisoners of the Blight and wanted to try for godhood herself. The NPC Gallery in the back of that module had a stat block for Gendowyn as a CR 15/MR 7 creature (CR 15 means 15th level and MR 7 means seven Mythic Ranks). This means that as Gendowyn is still a fledgeling god, which is why a dryad rival aided by the god Cyth-V’sug was able to imprison Gendowyn for 700 years.
The big gap in the Echelon Levels is what kind of adventures could characters with Echelon Levels participate in? How do the abilities of those levels make the adventures more exciting to play? For a roleplaying game, the rules should enable roleplaying instead of merely building the world.

I know six months is not much time, but this seems very interesting and well-done so far! Is it still in progress, or has it been abandoned?

Thanks for looking at it. It hasn't been abandoned, but it is on the back burner for now. And with the remaster I've been busy updating my other home brew stuff.
