Specifically, I tried to make a Witch Dedication and a Psychic Dedication and the rules keep saying they have spellcasting capabilities, possibly even a whole spell list... but I cannot find anything anywhere that helps me figure out how many cantrips, spells, etc they get at what levels. Even in the digital content I cannot seem to find what I need. Someone made a Sorcerer Trickster and I saw the whole sheet for that. Four cantrips at first level, etc etc.
Perhaps it is my dumb brain not able to find the correct search words to find it, and both the Pathbuilder and Wanderer's Guide don't seem to clarify this information either. "Hey you can cast spells!" is all any of them seem to tell me, and that is not at all helpful. If anyone has a link to an official document that does help me find out how much magic they get at all levels that would be super helpful! I did end up deciding to focus on Psychic Dedication as it had some things I liked over the Witch version, and I do wish there were more information and spreadsheets on the more magical subclasses of the Rogue.
So any help would be grateful, and if I have to buy a hard-copy of the book to get the tables needed to finish this build I suppose I will have to do just that. And again, I HAVE browsed through so much digital text in the official online books and forums without finding what I need. I am finally giving up the search alone and requesting aid!

That is slightly useful. I did not come across that page in my search, I simply kept getting run around in circles back to the physical abilities of the Rogue Table... Or brought to another class altogether that had nothing to do with Psychic Rogues. This helps some, but I guess I only get one cantrip and that's it unless I do focus on those other Archetypes.
Seems I have some tweaking to do! Thankfully starting at level 1 anyways, so I have time to adjust the class to fit this campaign. Thank you!
As for that post about Bounded Spellcasting that also didn't seem to relate to my Psychic class, and I have no idea where the post went. I went to respond to them and my browser had a hiccup and their post is gone now... (This part is more for that other response than for you Raven if they happen to look back here again since their post vanished)

The Archives of Nethys links to Psychic Archetype and Witch Archetype don't give the full story. Some important detais are in another link labeled Click here for the full rules on Archetypes, especially the last section of those full rules called Spellcasting Archetypes.
My campaign contains a rogue Sam with Scoundrel Racket who took the Sorcerer Multiclass Dedication at 2nd level, so let me use Sam as an example. Sam selected the Draconic Bloodline with red dragon type. The Sorcerer Multiclass Dedication with that bloodline gave Sam two cantrips from the arcane list, and Sam chose Produce Flame and Telekinetic Projectile. Those dealt more damage than shooting with his shortbow, so he stopped using his shortbow. Being limited to just two cantrips was no more limiting that sticking to a pair of weapons like a shortsward and a shortbow.
At 4th level Sam took the 4th-level Rogue feat Magical Trickster in order to be able to deal sneak attack damage with his spell attacks. Well, that is what it says in the feat, but getting an opponent flat-footed to a spell was very difficult. Flanking works only for melee weapon and unarmed attacks, not spell attacks. If the situation let Sam roll Deception or Stealth for initiative, then the Surprise Attack class feature let him catch slower-initiative opponents flat-footed. Casting a spell reveals Sam from Hiding, so he cannot use Hiding to catch opponents flat-footed. Sam's Feint took an action and often failed. I had pity on Sam and made a houserule that casting a spell from hiding worked like Striking from hiding--it revealed the character but their first attack still caught their foes flat-footed.
Flat-footedness became much easier at 10th level when the other rogue in the party, a Thief rogue, took Precise Debilitations and made opponents flat-footed to everyone.
Sam used his 6th-level feat for bloodline powers and did not take the sorcerer archetype's Basis Spellcasting feat, Basic Sorcerer Spellcasting, until 8th level. This is the feat that lets a rogue with a spellcasting archetype cast 1st-level spells. A ruling from Paizo also said that it lets them use wands and scrolls of their spellcasting tradition, too. The wands are important, because at 4th level the character has just one 1st-level spell slot. Cheap wands make up for that terrible shortage of spell slots. At 6th level the character gains a single 2nd-level spell slot for a total of two spell slots. At 8th level the character gains a single 3rd-level spell slot for a total of three spell slots. You can see why Sam did not bother with Basic Sorcerer Spellcasting until 8th level.
Sam could have taken Expert Sorcerer Spellcasting at 12th level, but he waited until 16th level when he received a 4th-level, 5th-level, and 6th-level spell slot. He was mainly interested in improving his arcane spell attack rolls and DCs to expert proficiency, due to missing more often at mere trained proficiency. Sam could have taken Master Sorcerer Spellcasting at 18th level, but he didn't. He is currently at 19th level, so I don't know whether he will take it at 20th level.
Thus, Sam is a 19th-level Magical Trickster rogue with only two cantrips and six spell slots, one of each spell level from 1st to 6th. His spell repertoire is Friendfetch (1st), Spider Climb (2nd), Invisibility Sphere (3rd), Veil (4th), Sending (5th), and Dragon Form (6th). He also has wands of Burning Hands, Magic Missile, and Acid Arrow.
