Do you actually need an archetype for that?
You can get skill training in Lore (mercantile) that would cover running a store during downtime. That would cost you one skill boost (maybe more if you want higher proficiency in it than Trained). Or you could get it from a background like Merchant.

I wasn’t really sure since they do have an archetype for scroll maker. Just looking to involve my character in downtime and crafting and various other thief activities to increase revenue
Scroll Trickster is for making temporary scrolls not permanent ones so it's made for adventuring, not making them to sell. Really, none of the archetypes are focused on downtime: generally, you everyone can make money at the same rate with Earn Income rolls.

Well, I don't know about increase revenue. Everyone should have some way of Earn Income during downtime. Having yours be running your fence pawn shop would certainly be thematic and appropriate. Great for role-play and such. But it isn't going to break the wealth-by-level expectations.
You could also use that as your explanation for things like Predictive Purchase or Prescient Consumable. Oh hey, look. I remember this coming through my shop the other week. I forgot that I put it in my pack.
Most class options, including archetypes, are for combat or at least encounter speed things. For example, Scroll Trickster gives Trick Magic Item and free daily use scrolls that don't need downtime to create. Both of those are meant for active adventuring.

Thanks for the great responses! I am building this character for Pathfinder Society since it's all I have access to, however if I ever find myself in a private/home game with the free archetype option...I don't know what to pick! Maybe Scout? Or Acrobat? My character focuses on charisma/face skills (No I definitely did not steal that.) or (Would you like to buy this potion I definitely didn't lift from your bag?), thieving (duh! haha :D) and stealth, with a side of athletics (how else can we get to the 3rd floor from the outside, sneak in, steal the precious diamond and make our escape?)
Then I want to sell wares for fun and I really enjoy the Merchatile Lore and I would like to put points into that. Would the same thing be useful for Underworld Lore, but for the black market? My background is criminal and I'd like to lean into the thieve's guild, underground marketplace, etc scene if possible.

Yes. Very similar idea. Lore (mercantile) would be running a legitimate business (that happens to be selling fenced goods), while Lore (underworld) would be finding a fence character and selling your hot loot to them, or running a black market booth in a shady thieves hideout. Both would be covered under Earn Income rules for the actual amount of profit you would be making from it.

I have a PFS merchant that I love, Zendel of Oprak. Zendel is a gnome who was adopted by the hobgoblin Brazadig of Brazadig's Construct Emporium. His father, who wants to develop trade partners all over Golarian, decided that the most expedient route to do so was to have Zendel join the Pathfinder Society, and make new connections wherever the Society sends him.
Mechanically:
Zendel is an Interrogator Investigator with a lot of charm. He's got Onyx Trader background, and Obsessive Lore to make both his Mercantile and Hobgoblin Lore scalable. He does have the Dandy archetype, which worked very well for his character.
(I could have seen also seen the Linguist archetype working for him, but I went with other choices.)
If you want to be a merchant, just be a merchant. Pick a mercantile background, or pick up mercantile/underworld lore with Additional Lore. If you want to max your Earn Income, be Field-Trained and acquire Storied Talent via the Horizon Hunters faction. (However, I actually think you will have more money if you're trained by one of the regular Pathfinder schools and get a free consumable with each mission. Your mileage may vary.)
Really, any character can be a merchant. What do you want to do with your merchant? Who are they? What are they selling?

If I had all the skill boosts I would invest in Int in order to boost crafting as well. I'd like to gather materials, steal materials, steal objects, and otherwise acquire anything and everything not nailed down, and then sell it for profit :D I think crafting my own dragon leather or something for later adventuring could be very fun. High quality magical items, potions, and consumables, weapons.. Anything and everything really. I'd like to get involved in the Thieve's Guild (if there is one) for missions that could be accomplished in tandem with the greater quest at hand for everyone else, a little side mission to bring them <something> from said dungeon/adventure for...some boon or money or something. I just want to do the whole charlatan snake oil salesman thief class fantasy. Steal something from your bag then bamboozle you into buying it back from me, that sort of thing. A mischief maker. Chaotic Neutral.

Downtime mode isn't something with major archetype support, but you don't really need it. Just take the feats additional lore (gives you auto scaling lore to legendary), experienced professional (no crit failures to earn income), and legendary professional (gets you renown in your field.) As a rogue you should be able to afford those skill feats. There are a few merchant themed items you can as well, and I think there's a counting related society feat which feels appropriate.

If you spend 1 skill feat on Additional Lore, the lore skill it gives you automatically increases as soon as possible. Additional lore (merchant) would pretty much be an archetype in being a merchant. As a rogue, you can definitely afford to spend a skill feat or two on filling in your character concept. There are a lot of great merchant/thief ones to choose from.
