Let's say I have an Int-based Elf Psychic who took Otherwordly Magic to get Produce Flame. At level 2, the Psychic takes Ancestral Mind.
Does Produce Flame effectively turn into a Psi Cantrip via Ancestral Mind? Or does Ancestral Mind just make the Produce Flame an Occult spell with which I can use Int as the casting stat instead of Cha?

You can cast any innate spells you know from an ancestry feat or heritage using your psychic spellcasting components.
The only ability that lets you use psychic spellcasting components and explains what they are is the Psychic Spellcasting class ability. I think we can reasonably conclude that this makes the cantrip a psychic spell.
That's important, because it qualifies it for the bonus damage from Unleash Psyche.
It doesn't however turn it into a Psi Cantrip; psi cantrips are only the specific cantrips you got from your Conscious Mind. The other cantrips you know that also use psychic spellcasting and that are psychic spells, are not psi cantrips.
So as a result, you wouldn't be able to amp up the produce flame you learned this way.

The innate spell is still that. You just learn to cast it using psychic spellcasting. Thankfully, this is the criterion used by Unleash Psyche. Not that it is a psychic spell (ie, one you get from the psychic class).
