No. Ki Strike is specific in that you, "Make an unarmed Strike or Flurry of Blows," two specific actions/activities as a part of the focus spell. Each finisher is itself an action that is not Strike or Flurry of Blows.
Edit: So when you cast Ki Strike you get a choice of Strike or Flurry of Blows. You do not have a finisher or any other special action as a choice, even if those actions or activities include strikes.

Indeed. Subordinate actions.
Confident Finisher says that you make a Strike. You can't upgrade that to some other action that includes a Strike as part of it. So no Power Attack with finisher either.
Ki Strike also say that you make either a Strike or a Flurry of Blows. You can't upgrade that Strike to a different action either.
If you have an ability that changes how all of your character's Strike actions work, then that would still apply to Strike actions made using finisher or Ki Strike.
