Yes. The "Tidy" option of Prestidigitation is instantaneous. The spell says "Any actual change to an object (beyond what is noted above) persists only as long as you Sustain the Spell." So something you Tidy will stay clean, as you have removed the dirt not hid it or anything, nor does food become un-cooked.
On a side note, it would take you 6 minutes to clean a Medium Sized creature with Prestidigitation, and 3 minutes for a Small creature. Then you have to calculate the weight of all their clothes and gear, and so on...

So...hold on...when you stop sustaining the spell...does the dirt on the object (or person) show up again (even after you took so much time to remove it)?

I wonder if this can be made more efficient.

You are missing the part that they bolded
beyond what is noted above
The cleaning is one of the things noted above. The cleaning removes the dirt. Ending the spell doesn't put the dirt back.
