Is the Mechanic's action economy (especially with an exocortex) at the point where they can get more mileage out of full-attacking and an unwieldly weapon is a bad choice, or are they more like classes like the envoy where it isn't as big a deal?

If exocortex I'd say have a weapon that can full attack.
But if you have a drone use unweildy so that your action economy is better, in addition you'd have lower BAB to begin with so using a single attack has higher chance of getting value in my experience.
I'd also suggest unwieldy for experimental armour given how insanely move action heavy that is.

My mechanic uses the Experimental weapon. I went for a heavy weapon. For character flavour I picked the Conqueror for my weapon (Plasma, has Unwieldy). With the Calibrate being a move (To add Level to Damage) vs a target, it allows me to shoot with a higher damage weapon. I do realize that in later turns I can miss out on shots (THe weapons are ammo hungry) but I do like the ability to hit hard and move.
