Alternate Natural Weapon really replace the limb ?

The Concordance

Wilderness Origins 8: These alternate natural attacks modify only the damage type of the shifter’s natural attacks and otherwise function exactly as the shifter claws class feature.
Fey (Feyform Shifter Archetype): Bite (B, P, S), sting (P).

So if a Feyform Shifter replace one Claw by Bite, does it means the hand is free and able to hold a shield ?

Yes, it does.

Strictly RAW, the new natural attack would be at the hand. But that's obviously not how it's supposed to work - I mean, what - "a stag aspect shifter growing claws makes no sense, so now he grows f+~@ing antlers on his hand, that totally makes sense"?

The only sensible way to play the alternate nautral weapons is that those attacks modify other body parts, so a bite would go to your mouth, etc., with a limit of one attack per body part. So yes, you could have 1 bite, 1 claw, and hold a shield in the other hand. You'd have to ask the GM whether you could make use of the stinger if you don't have a tail.

I agree with everything. I recall some monster having stingers in the hand, so I would allow it.

That option should have been written better.
