So I'm looking into making a Sword Binder Wizard 8/ Fighter 1/ Eldrich Knight 10 build that focuses on attacking with your weapon of choice through the Wizard sword toss ability. Do people think this is feasible/functional?
Other options I've seen are Magus 7/ Eldrich Knight 10 or using a specific archtype of Arcanist (but I'm not a fan there due to bab and not hitting touch AC).

Here's the thing. Past a certain level touch spells are mostly pointless; you get as good results from spells with no requirement that you hit. The build above doesn't exist until 10th level and that's about the last hurrah of the touch spells. From 13th level at the latest its abilities are redundant. It's feasible and functional but only really briefly.

The answer depends on how much you are leaning towards this build because you think it will be fun and unusual vs. how much you are relying on the Sword of the Mage (sword toss) ability as your “power gimmick.”
Because if you’re looking at from the gimmick side, it’s not great. You can only make those attacks at close range, and if you want to get the damage and effects from the sword, you’re not making a touch attack anymore. You’re probably better off just preparing the touch spells with the Reach metamagic feat applied.
Personally, I’d probably build a sword-throwing damage-dealing caster as a straight magus (maybe a card caster) with the Throwing Magus arcana. Won’t get the high-level spells, but you’re after the touch spells anyway.

Sword-binder does the melee touch spells at range thing but takes a lot of levels to get there. As to what you'd do with a gimmick once it's obsolete - I'm not sure. Better not to get to a place where you're building a character whose big thing becomes obsolete. Take Belafon's answer or go a different way, unless you're making the character for that narrow level range.
