If I'm wielding a Maul (two handed weapon), can I take my hand off the Maul in order to make an Athletics check to Trip with my free hand? Then next turn spend an action to regrip?
Yes, and you wouldn't necessarilly have to wait until the next round if you haven't used more than one action. Removing one's hand is a free action I believe. Regripping is an action.
So, for example, you could attack with the maul (1 action), release one hand (free action), attempt to trip (1 action), then regrip (1 action). Just remember that tripping has the attack trait, so it would take the multi-attack penalty in my example (since it's the second attack of the round). Had I not attacked with the maul first, there would be no penalty to the skill check.

You could wear handwraps while attacking with a maul. They would only give you a bonus to your trip attempt if you had an unarmed attack with the Trip trait.
Something like Armbands of Athleticism would still help you, though.
