Alright, how will YOU be putting mechs through their paces?
Personally, I'll be dropping my PCs onto Daimalko in a few tier 15-ish mechs and counting how many kaiju they can take out before being mushed into a paste.

I set up a battlefield with 3 control points that need to be captured to open up the final confrontation. APL 7
area 1 a group of 6 weaker enemies, totaling CR of 10, but I think it may turn out a little easier than on paper. Enemies are crest eaters and anacite ambassadors. tweaked slightly to make their abilities a little more relevant.
area 2 two 2 enemy fights, the first being against 2 Neutronium golems, which isn't meant to be hard, but test their mettle and mech ability against unusual circumstances (invisible enemies). Following up that is a CR 10-ish encounter with a dragonkin and moonflower.
approaching area three, likely through a canyon, I'm having a shantank attack them to test combat in tighter quarters when the enemy has a terrain advantage. Area 3 itself is also going to be against 1 anacite predator drone, to get a 1 enemy combat encounter in normal circumstances.
Approaching the final area, a group of 3 Mechs I made (2 CR 7 and 1 larger CR9) to test the enemy mech rules, and mech on mech combat.
The final area will be a young dragon with a couple of drones equipped to heal the dragon up a bit for the final confrontation that helps put something of a narrative behind the whole thing as "a dragon and his followers gaining control of an area that you need to take back" and have one final difficult battle.
