I'm confused about stances.
A stance is a general combat strategy that you enter by using an action with the stance trait, and that you remain in for some time. A stance lasts until you get knocked out, until its requirements (if any) are violated, until the encounter ends, or until you enter a new stance, whichever comes first. After you use an action with the stance trait, you can’t use another one for 1 round. You can enter or be in a stance only in encounter mode.

You take aim to pick off nearby enemies quickly. When using a ranged volley weapon while you are in this stance, you don’t take the penalty to your attack rolls from the volley trait. When using a ranged weapon that doesn’t have the volley trait, you gain a +2 circumstance bonus to damage rolls on attacks against targets within the weapon’s first range increment.
So, if I use my first action strike with my bow using Point-Blank shot, can I not also fire twice more that round using Point-Blank Shot? Does PBS only work on the first shot? The wording of PBS ("enemies", "damage rolls") seems to imply multiple shots.
OR, should I interpret the words "another one" to mean another stance, not another action?

Right. Entering the Point Blank Shot stance us an action with the stance trait. Making a strike (or most activities that include one or more strikes) while benefitting from the stance is not.

That's what I figured, but it's a poorly-constructed sentence. The antecedent of "another one" appears to be "an action with the stance trait". Plain reading of that would indicate that you can only use one such action per round.
Your plain reading is correct, though.
You can only use one action with the stance trait per round.
Strike doesn't have the stance trait, so the restriction in that sentence has no bearing on it.

That is correct. You cannot use a second action with the stance trait. The plain reading of the sentence is the only reading of the sentence.
In the case of Point Blank Shot, the only action with the stance trait is the action you spend to enter the stance.
