Any damage that would be rolled or added to the total if it were a normal hit is doubled for a critical hit. Splash damage is an explicit exception to this rule.
Any damage that would be rolled or added only because this is a critical hit does not double.
That's why characters and monsters are given good-sized hit point pools to work with.

What exactly is doubled on a critical hit? Is it precision damage? Just the dice? The Str or Dex adder? Inspire courage?

As an addendum, spells will usually tell you if something does or does not get multiplied, or if something is simply added. Compare Hydraulic Push (a 1st level spell) to Produce Flame (a cantrip). Hydraulic Push specifically states that it simply adds an additional 3D6 damage and an additional 5 feet on a critical based on the result of your dice, and the entire total damage is not actually increased. Whereas Produce Flame states that the base damage is doubled, but the persistent damage isn't (both because persistent cannot deal critical damage, but also because it's the result of a critical, the general rule being things from the result of a critical aren't multiplied, such as the Deadly or Fatal weapon traits). In short, the spell will tell you the results of a critical hit (or critical failure in terms of saving throws), or if it says it uses a Basic saving throw.
P.S., I fixed your sentencing because it can lead to some very awkward conversations if I left it. Doubling the Sex on a Critical Hit sounds accurate enough to me, but let's keep the game PG and PC here lol. (Unfortunate typo is unfortunate.)
