The question is in the title, Since you are casting dream to send yourself or a messenger into another dream, what happens if that person you try to dream is mentally immune. As per dream the target is actually yourself or a messenger not the mentally immune character who must still sleep and dream as a normal being. I really would like to know the interaction of this spell with such a person.

The person you try to dream is the messenger, not the receiver of the message.
If you are speaking of the person to which you are sending the message through the Dram spell, it will depend on the source of mental immunity. I would say that most creatures that have mental immunity don't dream.
If they dream it should work.
If you are speaking of the target of the spell, i.e. the messenger, it will not work unless he has a way to lower his immunity.

I would allow it to work, assuming the recipient of the message doesn't have some other reason for being immune (such as not sleeping, or it being specified that they do not dream). As you said, the target of the spell is the messenger rather than the recipient, which means the mind affecting tag applies to them.
I can certainly see an argument for also applying it to the recipient, but considering that the spell is strictly limited to a one way communication of a message it isn't going to harm a recipient to allow this to work.

I am speaking the recipient yes, they are a gourmand who has eaten a dire scorpion for mental immunity as per a vermin but still sleep. So you can see why this is tossing me through a loop. As one side they arnt the actual target of the spell just the recipient and they do sleep. On the other hand they gained it from a vermin immunity via the devouring and for this to work it is a sort of mental subconscious bonding in order to bridge the gap. So it can really be argued for either way.
