Pathfinder Lost Omens, Rulebook, Starfinder Roleplaying Game Subscriber
The Aasimar entry says they can be of many different humanoid races, and even the size entry says "usually medium"
I'm wondering if there are any guidelines around playing a Large Aasimar (specifically a Sarcesian Aasimar)
If not, what do you think is the best way to play something kind of sort of like a 10ft tall angel?

Considering that size category does not have nearly as many mechanical benefits as it did in PF1e, I think a large sized Aasimar is probably a reasonable request. The extra reach is balanced out by the trouble inherent in being a large sized creature in a world built mostly for medium sized creatures and the trouble your allies will have in shooting around you.
If you were at any of my home games I'd allow it.
