If I buy a physical item during this sale (which I understand runs until December 13), but have it shipped with my next subscription order (in January) will I still pay the sale price when it is shipped?
I assume "yes", but thought I'd check.
Also, previously asked and answered: Once you check out, the item is reserved for you, so that even if it sells out, you will still get one when your sidecart items are shipped.

IANCustomerService, but it has always worked that way for me. You only have to buy the item during the sale, but it can ship with your next sub.
My concern is the difference between when the sale ends and when your card is actually charged for the item.
My assumption is that both the item and the price are 'frozen' when you go through checkout. Even if it later sells out, you'll get your item and you'll be charged the sale price. No matter when the box is packed and your card is charged.
^This. I've bought things on sale and had them ship with my next sub (after the sale is over). Customer Service can absolutely verify, but this is how it's always worked in the past. You just have to go through checkout before the sale ends.

I can confirm that if you purchase items that are discounted from the holiday sale and put them in your sidecart to ship with the next subscription order, your items should retain the Holiday discount. It still may not to be combined with other promotions, as the Holiday discount being applied may prevent other future discounts from applying, but as long as your order is submitted prior to the end of the sale, the items will retain the discount.
