Is adding class level to the PF2 Creatures as straight forward as it has been in the past?

Not really. You're better off taking the Ogre Boss, giving it whatever druid-y abilities you find interesting and setting the numbers at the level you want it to be at.

No, not at all. Monsters are not built like PCs at all.

Start with the goal, the specific idea. So, if you see this Ogre being able to tangle, and spit acid (acid splash), then that is your end goal. Not simply, "Druid Ogre 2nd lvl"

Then just patch in what you need to fulfill that goal. Don't worry about "getting to" the goal, start with the goal.
