Lizardfolk have some great natural weapons: Claws, Bite, Tail

How does this stack up with stances that say "leg strikes" like Dragons Tail? Or rigid fingers of Rain of Embers?

Are these just fluff and any unarmed strike is good?

If this is a home game and the mechanics line up, why not. Tail seems really appropriate in particular. Otherwise, you get precisely what the stance provides and nothing else.

I don't think you can stack or otherwise combine them for the most part. You choose one or the other for any given attack.

Still, that gives you lots of options.
