Since both of them don't have a path, like the other classes, and since they are versatile classes, i was thinking about a specialization.
To put it simply, 3 choices could be made:
1) offensive > attack scaling like fighter
2) versatile > +1/+1 hibrid between a fighter and a champion/monk progression
3) defensive > defense scaling like a champ/monk
What do you think?
Ps: a fighter will still continue to get weapon critical specialization, but this won't affected its proficiency.
Pps: obviously, depends the path, master armor will be moved further, as for attack. Depends the path you chose.

I think it's an interesting idea, but the three will feel identical to play as-is. The point to different paths should be to change the feel and the types of things you do in a round. Maybe you could modify some of their feats to be restricted to one path, less effective except for one path, or have a small boon for one path (depending on how you want the class strength to change). You could also introduce some feats if you are restricting some so there aren't levels where you're forced into one feat.

That's definitely true.
My first thoughts was towards the proficiency, but paths need to be something which change your way to play.
