I’ve started a new project of turning the original 151 pokemon into Monsters for use with The Pathfinder 1st edition. I’ve gotten Bulbasaur’s stats up and will start work on Ivysaur later today.
Here is a link to a word document if anyone is interested in looking at them for one of their home games. The Japanese names are in parentheses just in case you don’t want to use the not fantasy sounding at all Wnglish names.

And the stats look good, I don't know if the saves of their special abilities are in line with the CR, but they look kinda low to me. And I would make Venusaur Large sized. He might be 6'7", but he's almost twice the width (i.e. Large). And then you might consider making Ivysaur medium (for the same reason).
Looking forward for more Pokémon!

I looked at the Bulbasaur and evolutions. They seem pretty fine to me. My opinion is that I would reduce the CRs of them all to give more wiggle room for higher level versions (like the game) for the sake of simplicity. Like, just as an example, Bulbasaur, Ivysaur, and Venusaur would be CR 1, 4, and 7, respectively, but that's just me.
