Retraining

Is it possible to retrain your level 1 Versatile Heritage general feat for example Incredible Initiative for Adopted Ancestry instead? Or can heritages just not be restrained?

Heritages cannot be retrained, but feats can be. Since this heritage grants you a 1st level general feat, there should be nothing stopping you from retraining that general feat to a different 1st level general feat.

What if at level 1 you took a normal Ancestry Feat such as Adapted Cantrip, could you still retrain your Versatile Heritage Incredible Initiative for Adopted Ancestry Gnome First World Magic? So you have two level 1 ancestry feats after retraining.

How are you getting two? Adopted Ancestry (Gnome) doesn't get you a gnome ancestry feat, just the ability to take some later.

You could retrain Versatile Heritage's Incredible Initiative to Adopted Ancestry (Gnome) and then retrain Adapted Cantrip to First World Magic, but you'll always end up with one ancestry feat from first level.
