Would anyone recommend taking these feats or are there just better options out there? If so how best to use these feats?

Esoteric Polymath is definitely take to expand your repertoire on a day by day basis. If you get access to uncommon travel spells or stuff like scrying this how you use them rather than have them permanently in your repertoire.
I’m less sure that Versatile Signature is a good idea, I feel like you can probably pick the best signature spells and keep them. If I did get it, and I might, I think I’d retrain it when Eclectic Polymath becomes available.
