What are the current legal races for Society? My GM said there should be a PDF with them but I can't find it.
I'm planning on making a monk based on a fanfic character I came up with who is basically a maned wolf beastman (GM already said I can reskin a Gnoll to look like a maned wolf instead of a hyena, just can't chance his stats any).
Can I play a Gnoll or, if not, a Kitsune, under current society rules?

Er, this PDF doesn't list the legal races. It's just a character sheet, item tracker, and some boons for a first character.
I appreciate the attempt, but this actually isn't what I was looking for. I need to know if I can play a Gnoll or Kitsune.
No, that link definitely takes you to the document you need.
Appendix 1 Character Creation will state:
Select your character’s race. The choices offered in the Core Rulebook are always available, as are ifrit, kitsune, nagaji, oread, sylph, tengu, undine, and wayang, provided you own a copy of the appropriate source book. [/ooc]

As others have posted above, gnolls are not legal to play. You'll need to let your GM know that gnolls are not a legal race for society play. Hopefully, they aren't allowing just any race a player wants to play except for the ones listed in the Guide to O.P.

As other's have already said, you can play a Kitsune but not a Gnoll. However, you cannot do the bit I bolded, and your GM does not get to tell you that you can. Things in PFS have to look like what they (mechanically) are.

The reskin rules are there to prevent one thing from looking like another with different stats: a pig like a dog was the cause of that kerfuffle
When something is generic like "big cat" you have a LOT of leeway, could be a lion. A tiger. A liger. A largeish puma. Raptor could be an eagle a hawk a falcon an owl.. it's not reskinning it's just varied flavor.
When something says "wolf" you don't know if it's a red wolf, a gray wolf, mexican wolf, all black wolf, abyssian wolf... as long as anyone looking at it would reasonably go "ack, big wild doggie" you're probably good.
When kitsune say they look like foxes, it doesn't say red red fox, silver red fox, silver fox, fennec fox, kit fox... We had an osirion kitsune in our group who looked like a fennec fox.
This is a maned wolf Its reddisth, has very foxish markings. So if you want to use that for your picture of a kitsune with a mohawk, close enough for state work.
