Probably because if there were in any significant quantity they would have probably built a dominant giant civilization that the people in charge of the setting don't really want to have. Since Lawful Good, by it's nature tends to get people organized and pointed in a constructive direction. If there were simply very few of them, it's easy enough to say "they were hunted to extinction."
If I wanted a LG society of giants I would put them on another planet or another plane.

Giants are humanoids.
Why should they be any different?
Of all the humanoids in Pathfinder, only one is listed as naturally LG (i.e., Vanara). LG is not an easy alignment to live ones life by. There exist LG humans, just as there exist LG giants... but they, like their human counterparts, are few and far between - and therefore do not show up as "typical for their kind" in the bestiaries.

One thing in particular about Giants is that as they are generally bigger than their neighbors, they are natural bullies. It is going to take an enormous amount of social and cultural evolution to go from "I can take what I want because I am big and you are small" to a kind of community-focused altruistic society, and Golarion keeps having cataclysms that keeps something like that from getting off the ground.
So if we wanted an LG giant society we would want to isolate them in a place where there are not initially smaller things to push around, and allow them to develop for a long time without being interrupted by things like the sun going out or their god dying.

Couldn't one argue the same thing about LN giants? There are at least two races of giant (moon and slag) I can think of that are LN.

Isn't LG the default alignment for dwarves? It was in DND anyway.

TOZ, You think LG Humans are not few and far between?
Or you think the % of LG Giants relative to the entire population of giants is significantly different (greater than/less than?) the % of the human population that is LG?

The race, not the iconic.
Alignment and Religion: Dwarves are driven by honor and tradition. While they are often stereotyped as standoffish, they have a strong sense of friendship and justice, and those who win their trust understand that while they work hard, they play even harder—especially when good ale is involved. Most dwarves are lawful good.
Lacking an actual Bestiary entry, that would be the alignment field for a hypothetical generic "Dwarf" entry.
