I was wondering:
Would be possible to declare that one is fighting defensively and then attempt to feint against an opponent?

If you can feint not using your standard action, then yes.
Fighting defensively gives a -4 to attack, which means you can attack whilst fighting defensively.
Having a flat footed target would be a nice way to make up for that penalty to your attack.
My understanding is that in order to fight defensively you must be attacking, so as stated above, if you were doing with another action other than your standard, yes, i shouldn't see any reason why it cannot work.
