Okay, so I stopped playing pathfinder when D&D 5e came out. Now, I am looking at getting back to it as I miss some of the complexity and options provided. What are some recent rule books released I should look at and what are the best adventures or Adventure Paths of the last few years?

It would help to say what were last books you used before you quit, as I personally don't know when exactly 5e came out. Also, second edition of Pathfinder is coming out, if you missed it.
The Mythic was the last core book I purchased I believe (2013 or 2014).
I have already preordered the 2nd edition which is why I have decided to get back into it.

Pathfinder Unchained: Optional alternative rules like Automatic Bonus Progression replacing the need for constantly finding/buying magic items. Optional alternative versions of classes - the Unchained Rogue is popular.
Advanced Class Guide: Contains new 'hybrid' classes like Arcanist (wizard/sorcerer), Bloodrager (sorcerer/barbarian), Warpriest (fighter/cleric), Swashbuckler, Slayer, etc.
Occult Adventures: Contains new classes like Kineticist (specialists in manipulating a particular element), Medium, Psychic, Mesmerist, etc.

You missed the most important book of all*: the Book of Heroic Races: Advanced Compendium. This book expands 12 races that the Advanced Race Guide and other sources gave very little definition to. Each race gets details as to what makes this race unique, details of their society, new race specific archetypes and class options, deities, spells, magic items and several sample NPCs for your game. If you would prefer it in print, you can order it in hardcover or softback at DriveThruRPG.
Also, if you are looking for some stand alone modules, check out the amazing Deadly Delve Adventures.

Matthew Downie mentioned three important hardbacks; Bestiary 5 is good as well, but I don’t personally like Bestiary 6.
A couple of Player Companion books (Weapon Master's Handbook and Armor Master's Handbook) made fighters a lot more viable.
(BTW, Legendary Games has done a heck of a lot with the Mythic rules, if you like them!)
Referring to the APs that have been released since Wrath of the Righteous. In reverse order:
Mummy’s Mask- Ancient Egypt style AP. Good fun IMO.
Iron Gods- Set in Numeria, it’s an AP that mixes themes of high technology and magic. Good fun IMO.
Giantslayer- Themed around killing giants. I liked the first two books, but found the rest boring, expecially after the awesome Iron Gods.
Hell’s Rebels- An urban-themed adventure where the PCs save a city from a Cheliaxan tyrant. Good fun IMO.
Hell’s Vengeance- The PCs are bad guys trying to put down a good-aligned rebellion in Cheliax. For evil PCs; this might or might not be your thing.
Strange Aeons- A (Cthulhu) Mythos-themed AP. Good fun IMO.
Ironfang Invasion- The PCs defeat an army of hobgoblins. Good fun IMO.
Ruins of Azlant- The PCs work to protect a new colony on some islands that were once part of Azlant. Good fun IMO.
War for the Crown- An intrigue-themed AP; this is the current one.
