Advice

I am looking for thoughts on a human "Don Quixote" type cavalier/paladin (gestalt). Any archetypes, cavalier order or feats that you think would be more appropriate than plain vanilla cavalier/paladin? Ideas on alternate classes will be entertained, though do not suggest any of the hybrid classes, they are not allowed.

Perhaps you should define what you mean by "Don Quixote" since I doubt you actually want a delusional elderly gentleman without any appreciable combat skills.

The Shining Knight archetype is great for a horse mounted combatant, which Don Quixote certainly was.

Horse, lance, classic chivalry, perhaps a little delusional (though not to the point of tilting at windmills or making it difficult to play in a group). The backstory is, his liege got tired of his "shenanigans" and sent him on a quest for the "Holy Grail"(or some legendary item) just to get rid of him.

Don Quixote believed himself to be a knight long after the age of chivalry was done. It wouldn't be dissimilar to someone going around in our time dressed as an old west sheriff.

His primary model for 'perfect chivalry' was Roland, who in turn is also the model for figures like Lancelot and D&D's paladin class. So if you want to play what Don Quixote believed/desired himself to be, the classic Paladin is the perfect fit.

If you want to be what Cervantes wrote Don Quixote as, a Brazen Deceiver Bard is the closest I can think of, although he also deceived himself, a mechanic that I don't think Pathfinder can really model, although a Splitersoul Vigilante comes sort of close.
