The coup de grace states:
"You automatically hit and score a critical hit. If the defender survives the damage, he must make a Fortitude save (DC 10 + damage dealt) or die."
My question is what is meant by die, is that like -30 HP no way coming back unless you have Raise Dead or something similar? Or does it mean I'm at 0 health and dieing?

It means exactly what it says. You die. You need resurrection magic to come back, same as most other forms of death. Exactly the same as if your hit points reached a negative amount equal to your constitution (So -10 for 10 Con, or -15 for 15 Con).

The dying and dead conditions are different. If something is said to kill you or make you "die" or "dead" it is applying the dead condition. Once you die you have bypassed the dying(0 hit points or less, but not dead yet) condition.
PS: That doesn't mean that you have to enter into the dying condition to gain the dead condition.
