It costs a swift action to begin Snapping Turtle Style, but you don't need to have a hand free to remain in the style. So once it's 'turned on', it's on. So that's it for swift actions.
Switching hands on a weapon is a free action, and changing back and forth between one and two hands on a weapon every round is called out as permitted. So it's perfectly legit to attack with a weapon in two hands, then change to just holding the weapon in one hand, and then switch back to attacking with two hands again. However, you may not change grip when it isn't your turn, so if you hold a two-handed weapon in one hand when it's not your turn, you can't attack with it (for Attacks of Opportunity and such). If you're going to grip-change a lot, it's easier to use a one-handed weapon in two hands to attack, and in one hand to defend.
