The spell sage is written before the psychic class existed. Is it then safe to assume that a spell sage can cast spells from the psychic list the same way he casts spells from the druid, cleric, and bard lists?
Or evem more? What about occultist, mesmerist, and spiritualist?

Definitely no by RAW.
I don't even think it's an oversight. Spell Sage is from the ACG, which means that there are a lot of spell lists that it could have given access to: inquisitor, magus, summoner, alchemist and most notably the witch. It seems likely that the decision to allow the spell sage to access spells from just three core classes is deliberate.
Now, as a home GM I would probably let you make a spell sage who had access to psychic class spells instead of either cleric or druid spells. Or maybe homebrew a feat to add access to those spells.

I like both the idea of switching it for cleric or druid, abd the idea of developing time and research to realise it.
Perhaps it would even not be such a bad idea to just have the character pick 2 level 9 spell lists and one level 6 list. Although that would be severely home-brewing it.
In the end, I'm really just looking for ways to combine the possibilities of arcane, psychic, and divine bloodlines for the purpose of long-term goals, like item creation.
