My friends and I haven't seen too much of Starfinder yet, but many of them are talking excitedly about using the rule set to play out a Fifth Element campaign, a Guardians of the Galaxy campaign, or an Outlaw Star campaign, all of which seem to mix magic with sci-fi.
What other stories/pop culture references could this rule set be used to emulate? Are you excited about emulating a particular story in your own campaign? If so, what?

Honestly, there's an entire section of books, comics, video games, films, and even other RPGs in the back of the book that even goes over this. I'm not sure there's much folks could say that wouldn't cover what's there.
...That said, I'm eager to run something more akin to Red Dwarf - more loner-style missions working with just enough to get by, and scavenging for supplies. At least for a little while - I tend to do too many "alone" campaigns already.

I see a lot of people mentioning scifi stories, but I am going to convert stories into scifi settings.
Players will have to retrieve their ship back from a space pirate like in Pirates of the Caribbean.
Then they will have to capture information from a government facility like in Mission Impossible.
Defend John Connor from the Terminator?
Maybe throw in a little Escape from New York? The options are endless if you don't just you Scifi themes.
