PFS Familiar and Mount How To

This may have been answered elsewhere, and I feel kinda silly asking but I have just started building a character with a familiar and a character with a mount too (two characters but I think this question will cross over). I am finding the rules confusing and I admit that that is probably down to my comprehension of what I am reading. Is there a flow chart or something that goes through the process of building a mount/familiar for PFS?

Most of the stuff I can work out. HP for a familiar is half the master's and for an animal companion (mount) it is 1/2 HD rounded down per HD.

Stats are a little shakey, but I assume you use the stats from CRB or Bestiary.

Where I am struggling is in the skills and application of bonuses. I assume they retain their racial +X to Y but do the skill bonuses just transfer over or do they get recalculated?

You may have

1 combat critter
1 mount
1 pocket toad

Combat critter: has pretty much no restrictions on it

Mount: takes move actions only

Pocket toad: just gives you a static bonus (one of the weird outsider familiars is too good as a pocket toad and can't do this)

I am looking at a sorcerer with a familiar and a cavalier. I have looked at that guide Flutter and it helped immensely.

No, two characters. Playing with a couple concepts.
