Is this impossible?

Homebrew and House Rules

Ok I think starting from scratch on the concept of this archetype or new class (whichever is easier) is in order. At the time of the start of this forum, I was in a bad headspace and wasn't exactly cooperative. What I was trying to do is use the Unchained Monk class and give it a flavor that was more focused around a katana, and drop anything that had to do with Unarmed Damage, or Flurry of Blows flavors. I was looking for a fast mobile character, a kind of wandering swordsman that didn't rely on armor, or and focused his body and mind to the pinnacle of humanoid existence. When forced, to fight these unassuming men/women of the sword could read your movements, assess the situation and hit hard, and fast bringing down their opponent fast.

These are some pointers on what I am looking for:
-Full BAB
-Good Reflex
-Monk Speed
-Monk AC
-Iaijutsu Strike (Precision damage that doesn't rely on feinting, flanking or flat footed AC)
-Dexterity to hit (maybe if possible)
-Dexterity to damage (again if possible)
-Good acrobatics for jumping, balancing, and rolling out of the way.
-Maybe some fun abilities by a ki pool that could augment jumping, speed, or extra damage for precision damage.

Now I thought that the Unchained Monk would be a good starting point, because 6 points have already been met, but there is a lot of filler in the Unchained Monk that needed to be addressed. If I could remove these aspects of the class and replace them with something else that would be perfect!
-No Unarmed Damage
-No Flurry of Blows
-No Ki Strikes
-No Stunning Fist
-No Still Mind
-No Purity of Body
-No Style Strikes
-No Tongue of the Sun and Moon
-No Timeless Body
-No Flawless Mind
-No Perfect Self

As you can see there is a bunch of filler I don't need. None of these abilities are necessary to my vision. And now last but not least is the current Ki Pool ability that the Unchained Monk has. It was molded perfectly for someone who focused on punching, but with this class or archetype, it won't do. So what I would propose is an exchange. If this class had the Ki Pool offered by the Ninja from Ultimate Combat, then it enables the class to fulfill it's roll to the fullest.

What are your thoughts on the issue or is what I'm looking for literally impossible?

It might work better to start with swashbuckler. An archetype that trades out some of standard deeds for the abilities you want seems doable.

why not just reskin a temple sword to a katana and have at it with an unchained monk?

There is a 3p product with an archetype like that.

Iajutsu adept (Swashbuckler archetype) [from legendary games - asian martial archetype]
It focuses on katana - check
It uses iajutsu with additional damage (not precision damage) - check
Good reflexes - check
Precision damage with precise strike from deeds - check
get great bonuss to acrobatics - check
fun abilities with deeds and spending panache points - check
Good reflex - check
Monk AC with the Nimble class feature - check
Monk speed - nope

So the only thing, the Iajutsu adept archetype is missing from your list is the monk speed.
