They try not to be too limiting, but the player guides are worth a look, as PCScipio said.

As a general rule, most classes and races will work in most APs - there are some exceptions though (no paladins in the "be pirates" AP, for instance. Similarly, the "be evil" AP is going to have some restrictions).

This. The player's guide will usually tell you what will be especially fitting and what won't work at all; if you don't see something mentioned, assume it'll work just fine.
