Do you mean the art, or as actual written appearances? The iconics were originally art "placeholders" so that various artists knew what/who to draw when depicting a "dragon fighting with a wizard and a barbarian". The artist would then use the iconic wizard and iconic barbarian in the artwork.
There are no actual interaction with iconic PCs in any of the APs, though there were stats to use them as NPCs in some of the early 3.5 APs (Legacy of fire, at least).

The way we decide what iconics appear in which Adventure Path is partially personal preference, partially what makes sense thematically for the Adventure Path's story and themes, and partially who appeared in the previous Adventure Path or two or three back. What makes a "balanced party" is never that high on the list, although we DO try to do one arcane, one divine, one martial, and one skill character if all else is equal.

I still find it amusing that Jade Regent, where one of the biggest complaints is how difficult it is to work a Tian native into the the starting scenario, used the Samurai.
I wonder why druid was chosen for Iron Gods. Gunslinger and Alchemist are the best suited for tech stuff, and Numeria has plenty of Barbarians (which share the iconic's ethnicity).
Wonder if Tyrant's Grasp will be partly or entirely composed of unusued hybrid/occult iconics so they have some appearance. Would like to see Yoon get something, especially since she'd be the most changed even if her class ever appears in the new edition. She barely gets any art outside of cover group shots. HA is full of cool picks of the iconics in terror or corrupted and all she gets is a shot of her looking over her shoulder with dull surprise.

I chose the druid in Iron Gods for a few reasons:
1) To give us a theme/color palate to play against the dominant themes/colors that would be showing up in art for a "post-apocalyptic laser-robot landscape."
2) Because there's several anti-technology spells that druids use so a druid is a strong choice in a technology-based adventure.
3) Because I like Lini.

well... jade regent, really, should be run with the pre-gens. were i to ever gm it, i'd make the players choose from them.
as far as tyrant's grasp goes, the kineticist does make an appearance along with the paladin. we'll see about the remaining two!

Thanks to this fabulous blog post, I can note down the spread of iconics in the Pathfinder Adventure Card Game! What's neat is that you just might be able to argue that the ACG party comps are more canon than the original RPG comps: They're more recent, and had the unique chance to fit each AP to the perfect thematic matches for its particular story, like Jirelle and Lirianne finally getting to be right at home in Skull & Shackles, much unlike that do-gooder Valeros.

Now, until (if?) PF2 prints these last classes, Pathfinder 1st Edition coming to a close leaves four remaining iconic characters depending on the ACG for their only chance at a fair shake starring in an AP: Aric the vigilante, Reiko the ninja, Zova the shifter, and Meligaster the mesmerist. But honestly, f$%! Meligaster; dude's a creep.
And the one guy with even less chance than Meligaster of ever getting the top billing he deserves is the true iconic antipaladin, Stabby Bob. That's the real crime here.
