Hi,
what are the current options for a class to gain a full level animal companion? (As in, not druid level -3).
I understand that you can't go Nature Soul - Animal Ally - Boon Companion because the last one requires an animal companion as a class ability rather than provided by feats?
Are there any archetypes or other options that allow for non-Druid/Hunter classes to gain a full druid level animal companion?

There is no "animal companion" class feature. Druids have a "nature bond" class feature through which they can get an animal companion. Rangers have a "hunter's bond" class feature through which they can get an animal companion. Oh, hunters do have an "animal companion" feature, actually, but my point stands, since that class postdates Boon Companion IIRC.
I do not believe there are other ways within Paizo material. There's probably 3pp stuff.

We have dev commentary, and it's the generally accepted view that if you have something, regardless of how you have it, it counts for stuff.
So having an animal companion via feats works.
Having channel energy by classed channel spirits counts as channel energy.
Cause to note, druids don't have the animal companion class feature, They have nature's bond which they can choose between and animal or domain and wizards don't have the familiar class feature, they have the arcane bond class feature.

The cavalier gets an beasty at first level though that is a mount style of critter. There are no rules saying you have to ride it though. You could take the Castellan archetype but that needs boon companion.
Any archetypes I have found do not give an animal companion at first level. Which is sad :(
