I have a witch player who really wants a rabbit familiar.

The weird thing is, I have looked in all 5 bestiaries and I have not been able to find stats for a rabbit.

Am I missing it? Is there something else that is close enough? What bonus would it give?

Animal Archive has the rules for a rabbit familiar (it's +4 INIT, I think). Inner Sea Beastiary has stats for a rabbit.

I think a bonus to Jumping would be more appropriate. It's easy to just say it's a familiar too. For reference, this page talks about making new familiars.

The Reign of Winter Player's Guide has an Arctic Hare, if you want to stick to the pun. It grants +4 initiative.

And there's always the Pooka, if your player wants to aim for an Improved Familiar.
