How many times in total am I rolling damage and how many times am I adding str?

You roll damage 5 times, adding STR to each roll. That is because in pathfinder you don't multiply multipliers. Instead you add the 3 extra rolls from GVS and the 1 extra roll from the crit together, giving you a total of 4 additional damage rolls.
