I actually managed to work out a rough Witcher archetype for rangers:
Replace spells with alchemy gained at the same level and progression.
Replace Hunter's Bond with Brew Potion, Poison Use, and Poison Resistance.
Replace Favored Terrain with Alchemist discoveries.
I think that strikes the right balance and flavor, you get a martial character who uses alchemy to help kill monsters. Doesn't get the high end alchemy extracts nor as many discoveries as a pure alchemist, and lacks some of the classical Ranger features, but the power level seems about right.

Personally I'd go full on Ranger/Alchemist hybrid class rather than just an archetype, but that's just me.
I'd put on a limitation that they can't select animals, constructs, or humanoids as favored enemies. If I were being particularly pedantic I might further limit the selection by taking out dragons, outsiders, and plants, being that those, generally speaking, aren't the kind of monsters witchers are called upon to fight in most cases but I could be argued out of that.
They'd need to be restricted to the two-handed weapon combat style, probably with a further restriction that they would have to use weapons that appear in the heavy blades fighter weapon group.
