Grapple Focused Eidolon and Summoner?

So I have been curious about making this character after seeing the Black Tentacles spell. Make your jokes now, because this is something that I think would be a fun control variation of the Summoner as opposed to the normal "Pounce + full attack = kill anything" build that most summoners I've seen have. So the idea I had was a Serpent base creature with Grab and Constrict obviously... Is it possible to 'replace' base evolutions with other evolutions? I'd much prefer 2 Tentacle and a Tail/Sting attack, but not necessary. The basic idea was it would be a giant floating orb of grabs. Worse comes to worse, I'll make it multiple Tail Slaps instead.

My main questions are: Can I grapple multiple opponents? Grabbing Master seams to imply you can grab multiple, but only hold down 1 at a time? If the answer is yes, then I would like to continue with the build.

Assuming level 12 Half Elf with Naturalist (not PFS) or just Half Elf (for PFS)

Type: Protean, Base: Serpent

Str 21, Dex 19, Con 15, Int 7, Wis 10, Cha 11.

Improved Grapple

Quick Grapple

So basic idea is grapple control. Tail Slap for 2d6 damage per attack, and hold them down with constrict. Any way to improve upon this idea?
