"Check spell resistance only once for any particular casting of a spell or use of a spell-like ability. If spell resistance fails the first time, it fails each time the creature encounters that same casting of the spell. Likewise, if the spell resistance succeeds the first time, it always succeeds."
This particular paragraph from Core Rulebook page 565 really confuses me.
So lets say I cast fireball on someone with spell resistance, and I fail to overcome it, so does this mean that he is immune to fireball forever from now on or that my fireballs cast on him will auto fail?

The key phrase is "same casting". Your example has you casting fireballs multiple times. Those are not the "same casting".
Example:
If I cast Spiritual Hammer and have it target an enemy with SR I roll the SR check only once and it applies for as long as the spell is going.
Even if I send it away to attack something else and then bring it back to attack the enemy.
Now, if I cast a SECOND Spiritual Hammer spell that is new casting and thus I roll a new SR check.
Summary: You roll SR for each fireball.
