Material constuction is more part of the description than a rules thing on most creatures. I'm asking in regard to this description:
Inevitable eidolons appear as a mixture between clockwork constructs and idealized humanoid statues.
Seems like clockwork constructs would be metal, but perhaps it doesn't do that unless it specifically says?

Doesn't say so anywhere in rules, so game mechanicwise, no they are not.
While this is probably the most correct answer, going down this road also makes iron golems unaffected by rust monsters too and stuff like that gets messy.
Divorcing oneself from the mechanics of it, they are described as metallic so it does make some sense.
On the flip side I'm not really sure Inevitable eidolons really need some extra weakness attached to them, even if it's just from a few specific effects.

Doesn't have to be a weakness. Being able to use the eidolon as bait instead of the full plate fighter can be a solid boon for the party. And they aren't weak eidolons.
