1. You get two wakazashi.

2. Light, like short swords.
3. Depends on the enchantment. An enchantment like Vorpal, which requires a slashing weapon, wouldn't apply to the quarterstaff. GM might rule that only the blade gets enchanted, but it should still count as a masterwork quarterstaff.
4. Move action like drawing any other weapon from it sheath, unless you have Quick Draw. Your GM might let you treat it like a Sword Cane, which is a swift action to draw.
5. Yes, since it acts as a quarterstaff. Drawing one of the blades would either cause the spell to be suppressed or dispelled (GM discretion).

The errata for UE changed the stats to:

And the description to:

So, it's a quarterstaff. If you draw the blades (no inherent bonus to drawing, so the same move action as a normal "draw a weapon action"), they are worse than wakizashis. This is simply a terrible weapon.
Buy two wakizashis, buy them with combat scabbards, glue/tape the scabbards together. You have made a better version of this weapon.

DOUBLE WALKING STICK KATANA
This single case conceals a pair of matched fighting swords perfectly balanced to be wielded as a pair. Despite their name, the blades more closely resemble the shorter wakizashi. When drawn, the blades use the statistics listed on the table. When the blades are concealed in their case, this weapon can be used as a quarterstaff.

From the description above, you definitely get two separate "katanas."
2) What category do they fall under? Light or One Handed?
That part is unclear to me. The table identifies the Double Walking Stick Katana as a two handed weapon, but the fact that the two blades aren't connected makes that a weird interpretation. To me, the comparison to Wakizashi makes me think they would be considered light weapons for the purposes of TWF.
3) If you enchant the Katanas, do those ends of the Quarterstaff also get enchanted?
I can't imagine why the case would get the same enchantments as the swords. Maybe it could be enchanted separately though.

In the absence of anything to the contrary, I would assume the standard drawing time.

I can't see any reason why not.

Ergo;
1: Two swords. Not really katanas.
2: Light, like the wakizashi they actually resemble
3: No clear rule, but I'd say no. You don't usually enchant the HILT of a sword.
4: Normal weapon draw.
5: Yes, it's a quarterstaff so the spell works.

I'm very, very slightly inclined to let qualifying enchants work in quarterstaff mode ... but only on one end of it. This assumes that enchanting the thing counts as any other attempt to enchant a double weapon (mainly, you have to do both 'sides'). If nothing else, I imagine it being along the lines of 'simpler', 'no need to nerf this thing any farther', and 'magic knows better'.

When I played a Tengu character wielding a Double Walking stick Katana recently we played it as follows.
1. When deployed two separate swords using Wakizashi stats, DWK stats for Undeployed use.
2. Light and finessable
3. No, all ends needed to be enchanted (or in my case Masterworked - I couldn't afford all four ends @ +1) separately.
4. Same rules as a Sword Cane for speed of draw and perception to realise it was a DWK. We decided if it was in your hands as a staff it seemed fair for it to be quicker. To 'draw' the staff was normal speed.

Just downloaded the new 'printing' after seeing this and I have to agree from fun and useful, though expensive, to poop.
