How about wuxia style combat in a game system.

Green Ronin had one called "Dragonfist". I'm not sure if they still sell it anymore, though. I have a copy, and it's pretty cool.

Dreamscarred Press' "Path of War" is also really good for simulating Wuxia combat.

Legends of the Wulin is pretty good for that. For Exalted Third Edition, they modified the combat system to model the whole "fighting back and forth to take control of the fight before launching your finishing attack" thing pretty well.

And for setting, the book Dragon Tiger Ox is excellent.

Moving beyond Pathfinder, I've heard good things about Legend of the Five Rings and Feng Shui 2.

Savage Worlds can also be adapted for it as well.
