Looking at the abilities, they don't specifically say anything that would let someone know if such a saving throw had failed. However, if part of that 'Control Undead' involves them no longer being willing targets for an ability, it's conceivable that they could drop out of it... and the Vitalist in question would probably realize they'd left the Collective.

There is nothing specific in the vitalist class that directly allows for the detection of an undead pc (who I assume is part of the Vitalist's collective) under the control of someone else.
However, control undead is a compulsion effect. As a result, a simple sense motive check can reveal that all is not right with the undead PC.
