Can an Iorian Paladin use their ki pool to make an extra attack on a full attack?
If not and I have a ki pool from my paladin at 1 level in Monk, can I use my ki pool for the extra attack?
Now same question but what if my monk level was an Unchained Monk? Would I get the Unchained extra attack or the normal monk's extra attack?

This ability otherwise functions as the monk ability of the same name and replaces channel positive energy.
You can do everything a monk can do with their Ki Pool class feature, except as specifically stated in the Irorian Paladin's power. (which, as it turns out, only adds options and changes how the ki point total is calculated)
However:
By spending 1 point from his ki pool, a monk can do one of the following: Make one additional attack at his highest attack bonus when making a flurry of blows attack
Thus, you must be making a flurry of blows attack to use that particular ki option. Having a single monk level would give you access to the needed flurry of blows. (although any other way you could come up with to make a flurry of blows attack would also work)
The Unchained Monk also has flurry of blows, so you could use a ki point to acquire an extra attack when making one of those as well.

I would go with sohei, personally. While there are arguments about general value of their melee abilities, it is hard to argue that sohei is more dip friendly since it allows light armor during a flurry.
One of the advantages of iroran paladins is that they can get their mental stat into AC action while in light armor. Sure, it is subject to max ac, but that just means you only need a moderate dex/cha investment in order to get fullplate levels of AC. a 14/14 already sticks at the level of 'don't worry about it'. So they have much less need to fully turtle up their stats like an unarmored monk at low levels.
